Beef Stew a la Moorend

Ingredients:

8lb shoulder steak, cubed

Oil for frying

3lb red onions, sliced

½lb plain flour

8 oranges, peeled and cut into quarters

Approx 4 pints of cider

2 pints of stock

12oz dried apricots, chopped

8 tbsp vinegar

Sea salt and black pepper

2 tsp curry powder

4oz brown sugar

Few shakes of soy sauce

Herbs

 

 

 

 

 

Method:

Fry all the meat in oil.

Fry onions and add flour.

Put meat and onions in a casserole dish together with remaining ingredients and cook for three to four hours.
